    Rijstaffel is a Dutch term meaning rice table. This makes a great decoration for your Indonesian meal. Coat a large strainer with nonstick cooking spray (if you don't have a large strainer, you can use a smaller round one). Line with plastic wrap (figure A) and press full of cooked yellow rice (slightly overcook the rice so it will stick together well). Unmold and remove the plastic wrap (figure B). Top the mound with small round pepper and slice of star fruit on a skewer (figure C).



    Place this in the center of the table and add different appetizer dishes, etc. There are no absolutes when it comes to rijstaffel other than using a really nice rice dish.



    Peanut Sauce is good to add to a rijstaffel (figure D). Here's our recipe for a peanut sauce:

    Ingredients:

    1 chili pepper
    2 cloves garlic
    1/2 onion
    3-4 Tbs. peanut butter
    1 Tbs. tamarind sauce
    1 Tbs. sweet soy sauce
    1/4 tsp. lemon juice
    1/8 cup water

    Preparation:

    Chop chili pepper, garlic and onion and place in bowl. Add peanut butter, tamarind sauce, sweet soy sauce, lemon juice and water; whisk together for a fun dip.

    Another good dish for the rijstaffel is pickled vegetables (figure E). Chop up vegetables of your choice, place in large saute pan and pickle by simmering them in vinegar, turmeric, and Asian bay leaf. If you want to spice it up a little bit, add some chili peppers.
