Most people enjoy receiving food gifts. Here are recipes for a chutney, peanut salad dressing and pecan pesto, all of which are made with Georgia pecans and nuts and would make great additions to a gift basket.

    Ingredients for Chutney:

    3 Tbs. butter
    1 cup leeks
2 cups apples, sliced, peeled and cored
2 cups diced, cooked sweet potatoes
    1/3 cup chopped pecans
    1/4 tsp. salt
    1 medium orange

    Preparation:

Add apples to butter in a saute pan. Once the apples have wilted a bit, add chopped leeks, sweet potatoes, pecans, salt and orange sections.

This chutney (figure A) is great served cold with grilled chicken.

    Ingredients for Peanut Salad Dressing:

    1/2 cup spinach, chopped
    1/2 cup tarragon
    1/3 cup peanut oil
    2 Tbs. chunky peanut butter
    2 tsp. garlic
    2 tsp. lemon juice
    1 Tbs. red wine vinegar
    Salt to taste

    Preparation:

Place all ingredients in a food processor and blend.

This is good tossed with orzo as well as with shrimp or chicken (figure B).

    Ingredients for Pecan Pesto:

    1/2 cup spinach, chopped
    1/4 cup basil
    1/4 cup Italian parsley
    1-1/2 Tbs. garlic, minced
    3 Tbs. toasted pecans
1/2 cup extra virgin olive oil
    1/4 cup Parmesan cheese
    Salt

    Preparation:

Puree spinach, basil, parsley, garlic and toasted pecans in a food processor. Add olive oil, dash salt and grated Parmesan and blend. This freezes beautifully. (figure C).

Great with pasta and with green beans, this makes a perfect gift. If you want to make up a small gift basket, just place a jar of this pesto with a container of dried pasta in a small basket lined with a dishtowel (figure
