    Garlic/Herb Pork Roast With Apple-Onion Topping

    Ingredients:

    One center-cut pork loin roast
    Minced garlic to taste
    Virgin olive oil to taste
    Herbes de Provence (a mixture of dried herbs essential to French cooking that usually includes basil, fennel seed, lavender, marjoram, rosemary, sage and thyme) to taste
    Salt and pepper to taste

    Preparation:

    Coat the pork roast with the above ingredients, cover with foil and refrigerate for a couple of hours. Then bake at 350 degrees for 35 to 40 minutes. Remove foil and continue baking for approximately 15 minutes more.

    Topping Ingredients:

    1 medium onion, sliced
    1 medium apple, cored and sliced
    1/2 stick butter
    1 Tbs. cane syrup
    1-1/4 cups pork drippings
    1 Tbs. fresh parsley, chopped

    Preparation:

    To make the topping, sautC) the onion in butter. Add apple slices, then pork drippings and cane syrup, finishing with parsley. Serve over pork roast slices.

    Servings: 10 to 12

    Chef's Note: Red onion and Granny Smith apples are recommended; however, you can use your favorite.
